Soft and Fluffy Sugar Cookies

One year, for Cyrus’ birthday, Beryl got the idea to make her dad’s soft and pillowy sugar cookies into bear shapes with cloud bear-inspired icing. Mr. Cor was embarrassed when he found out, thinking the Keeper and Old Guard would disapprove if they saw, considering the cloud bear incident. However, when Mr. Cor heard Cyrus brought a plate of the cookies to the Stronghold for them, and Keeper Pike and the Old Guard declared the cookies both hilarious and delightful, well, the shape stuck, if not the coloring. That remained a special treat for Cyrus’ birthdays.
Ingredients
Cookie Ingredients
3 1/2 cup Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1/2 cup Butter
1 cup Sugar
1/2 cup Sour Cream
2 Eggs
1/2 tsp Almond Extract
1 tsp Vanilla Extract
Icing Ingredients
1/2 cup Butter
2-3 cups Powdered Sugar
1 1/2 tsp Almond Extract
3-6 Tbsp Heavy Cream
1/8 tsp Salt
Instructions
Cookie Instructions
Mix the dry ingredients in a bowl. Set aside.
In another mixing bowl, cream together the butter, sour cream, and sugar. Beat in the eggs and extracts and beat for 2 minutes.
Add the dry ingredients a little at a time.
Wrap the dough in plastic wrap and chill for at least an hour.
Roll out to 1/4-inch thickness and cut into rounded shapes (i.e., use less detailed cookie cutters, like a standard gingerbread man). Use as much flour as necessary to make the dough easily workable.
Bake at 350° for 8-10 minutes, depending on the size of the cookies. Frost once completely cooled.
Almond Buttercream Instructions
Beat the butter until fluffy.
Gradually add the powdered sugar.
Add 3 Tbsp of the cream, the almond extract, and salt.
Beat on medium-high for 2-3 minutes. Add more cream to thin if necessary.
Mix by hand to press out the air bubbles, and add coloring if desired.
Yield: 20-30 cookies, depending on the size of the cookie cutters.
