Gingersnaps

“Ray can usually coax Cyrus into eating,” Sylvia said. “I gave Raymond some gingersnaps to take to Cyrus this morning. I know he hasn’t finished the other cookies I gave him, but...”

“You do what you can.” Beryl screwed the lid on the jar and handed it to Alec.

“Yes. You do what you can.” Sylvia went out into the bakery.

Ingredients

2 1/4 cup Flour

2 tsp Baking Soda

1/2 tsp Salt

1 tsp Ginger

1 tsp Cinnamon

1/2 tsp Cloves

 

3/4 cup Shortening

1 cup Brown Sugar

1/4 cup Molasses

1 Egg

 

White Sugar (For Rolling)

Instructions

Whisk together the dry ingredients. Set aside.

In another mixing bowl, cream the shortening, brown sugar, molasses, and egg until fluffy.

Mix the dry ingredients into the wet ingredients.

Form into small balls. Roll the balls in the white sugar until coated, then place on a cookie sheet.

            Bake at 375° for 8 minutes. If necessary, slam the cookie sheet on the counter after baking to “crack” the cookies.

Note: Instructions for cookies made with a 2 tsp scoop. Cookies may be made with a larger scoop, but the bake time will vary.

Yield: 3-4 Dozen
