Moonlight Chicken Soup

“If you’re going to see Cyrus, take this.” Beryl went over to the stove and ladled creamy chicken soup into a jar. “We know he hasn’t had dinner, if he’s even had lunch.”

The chicken soup had cooled significantly on the walk over. Alec took a saucepan out of a drawer and poured half the soup into it.

“Al?”

Alec turned. Cyrus stood in the doorway, rubbing one eye. “Beryl gave this to me for you.” Alec held up the jar. He put the saucepan on the stove and turned it on. “I’m under strict orders to make sure you eat it, since you haven’t had dinner.”

“How do you know?” Cyrus pulled out one of the kitchen chairs and sat.

“Have you?”

“No.”

“Well, there you go.”

Ingredients

2 Tbsp Butter

1/2 cup Onion

1/2 tsp Garlic

1 cup Carrots

1 cup Celery

1 tsp Salt

1/4 tsp Pepper

3 cups Chicken Broth

2 cups Milk (Whole is preferred)

3 cups Potatoes (Peeled and chopped)

8 oz Cream Cheese

2 cups Chicken (Pre-Cooked)

1 tsp Italian Seasoning (Optional)

Instructions

In a large pot, melt the butter.

Add the onion, celery, and carrors and saute until tender over medium heat.

Add the garlic and continue to cook for 30 seconds.

Add the salt and pepper, then add the chicken broth and milk, then add the potatoes.

Bring to a simmer and simmer for 15 minutes until the potatoes are tender.

Add the chicken, then stir in the cream cheese. If desired, add the Italian seasoning. Keep stirring until the cream cheese melts completely, then serve.

 

Notes: Technically, any meat can be used instead of chicken. It also tastes good with ham.
